Hawaij Braised Celery


While most people use celery only for soups and stocks, we believe celery deserves to get more center stage attention. This side dish gives the humble vegetable exactly that.

Make sure to look for celery that is super fresh and crisp, otherwise it will be too fibrous and as pleasant to enjoy.

1 pound celery, peel outer layers

2 garlic cloves, peeled, cut in half

1 tablespoon olive oil

1 teaspoon Hawaij

¼ cup Signature Matbucha

1 cup water 

½ tsp salt or to tast

Prep the celery by chopping it into 2 inch pieces and cutting it lengthwise in the middle.

In a medium size pot,on low heat, warm up the oil and garlic, once the oil heats up and becomes fragrant add the Hawaij and matbucha, and mix. Add the celery sticks and mix with the Hawaij mixture, followed by adding the water and salt. Cook covered for 5-10 minutes on medium heat until the water boils and then lower heat and cook for 45-60 minutes or until the celery is tender.
