Preserved Lemon Chicken With A Pistachio Chimichurri


Using our Preserved Lemon BBQ Sauce is a simple one-step way to infuse chicken with loads of bright summery flavor. The optional chimichurri sauce lends even more pizzazz. Serve with rice and a favorite salad or grilled vegetables to round out the meal. The chicken can be grilled or broiled.

Serves 2-4

Preserved Lemon Chicken

4 boneless, skinless chicken thighs

1/3 cup New York Shuk Preserved Lemon BBQ Sauce

4 sprigs fresh rosemary and/or thyme (optional)

1/2 teaspoon salt

Pistachio Chimichurri

3/4 cups finely chopped parsley

1/4 cup shelled unsalted pistachios, finely chopped

1/2 cup extra-virgin olive oil

1 tablespoon New York Shuk Preserved Lemon BBQ Sauce

1 tablespoon apple cider vinegar

For Chicken: In a bowl, combine chicken, Preserved Lemon BBQ sauce, herbs, if using, and salt. If time allows, marinate 30 minutes or up to overnight. 

For Chimichurri: In a bowl, whisk together all ingredients. Season with salt to taste.  

Prepare a grill for medium-high heat. Grill chicken 6-8 minutes per side, or until cooked through. Serve, topped with the chimichurri. 

To broil chicken: position oven rack 3-4” below the broiler heating element. Arrange chicken pieces on a foil-lined baking pan, spaced ½-inch apart. Broil on high, 8-10 minutes per side, or until cooked through.
