Lemony Potato Salad


This five-ingredient potato salad is sure to impress you and your guests. The bright, lemony flavors make it the perfect side for meat, chicken and fish, but the salad is also a star on its own. To change things up, feel free to add Za’atar and/or Sumac to the seasoning.

Serves 4-6

6 large potatoes, such as russet or Yukon Gold, peeled if desired

Salt

4 scallions, finely chopped

1 bunch fresh flat-leaf parsley, finely chopped (about 1 cup)

⅓ cup New York Shuk Preserved Lemon BBQ Sauce

3 tablespoons extra-virgin olive oil

Place the potatoes in a large saucepan, add water to cover and season with salt to your liking. Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender. Drain the potatoes. When cool enough to handle, cut into 1-inch pieces. 

In a large bowl, combine the scallions, parsley, Preserved Lemon BBQ Sauce and olive oil and stir well. Add the potatoes and mix gently so they won't break apart. Taste and adjust the seasoning with salt.
