I would suggest you make the Preserved lemon & honey syrup in advance so you can whip this super refreshing, simple & bright cocktail on a whim.

Makes 1 serving
1 jigger (2 Tbsp) gin
1/2 jigger (1.5 Tbsp) fresh-squeezed lemon juice
1/2 jigger (1.5 Tbsp) Preserved Lemon Paste and honey simple syrup*
Mix all ingredients in a shaker with ice, shake until chilled, strain and serve in a cocktail glass
Garnish options: lemon spiral or honey stick
* Preserved Lemon Paste and honey simple syrup:
1/2 cup honey
1/2 cup water
1 tablespoon Preserved Lemon Paste
Bring to boil over medium heat. Stir continuously. Remove from heat pour into storage jar and refrigerate.
