I would suggest you make the rosemary and preserved lemon simple syrup in advance so you can whip this super refreshing, simple & bright cocktail on a whim.

Makes 1 serving
Combine the following in a shaker with ice:
1 jigger (2 Tbsp) tequila silver
1/2 jigger (1.5 Tbsp) rosemary and preserved lemon simple syrup*
1/2 jigger (1.5 Tbsp) lime juice
3 jiggers (9 Tbsp) grapefruit juice
Top off with club soda and serve over ice
Garnish options: lime/grapefruit peel, rosemary sprig
Replacement options: replace tequila with mezcal for a smokey flavor
*Rosemary and Preserved Lemon Paste simple syrup:
1/2 cup sugar
1/2 cup water
5 rosemary sprigs
1.5 tsp Preserved Lemon Paste
Bring to boil over medium heat. Stir continuously. Remove from heat, strain out rosemary sprigs and pour into storage jar. Store in fridge for up to one week.
