TZATZIKI


A tangy, refreshing yogurt dip with Preserved Lemon & Sumac.
Tzatziki is great as a dip/spread just on its own, or accompanied by fish, meat or vegetables.

You will need:

1 cucumber, peeled

1 cup greek yogurt

1 tablespoon New York Shuk Preserved Lemon Paste

½ teaspoon New York Shuk Sumac

½ tablespoon olive oil

½ garlic clove, minced

2 tablespoons dill, finely chopped

2 tablespoons mint, finely chopped 

Salt to taste

New York Shuk Sumac or Za’atar for sprinkling (optional)

Using a box grater, grate the cucumber, then squeeze with your hands to remove the excess liquid. Transfer the cucumber to a medium bowl. Add the yogurt, Preserved Lemon Paste, Sumac, olive oil, garlic, dill and mint and stir until well combined. Taste and adjust the seasoning as needed with salt and more Preserved Lemon Paste.

Spread the tzatziki on a serving plate and top with sumac or za’atar (if using) and a drizzle of olive oil.
