ZA’ATAR EGGS ON MATBUCHA & YOGURT SANDWICH


Cut a nice, thick piece of bread. Add a dollop of plain yogurt (we used Icelandic Provisions Traditional Plain Skyr) on top and spread it around with the back of a spoon. Add a dollop of New York Shuk Matbucha and do the same.

Top with 2 Za’atar fried eggs*. Serve while warm so the yolk is still runny. Cut in half if serving as a sandwich or leave whole for the open faced version.

*Za’atar Fried Eggs

For sunny-side-up eggs, start with a hot nonstick skillet on medium heat. Swirl in a little butter or olive oil. Crack the eggs and add to the pan. Let the eggs cook for one minute until the edges turn white and sprinkle in as much Za’atar as you like. Cover the pan and lower the heat. Wait 4-5 minutes and you'll have perfect eggs – The longer you cook the eggs, the harder the yolk will be. If you want a medium yolk, cook for 5 minutes.
