Za'atar Sweet Potato Gratin

This Mediterranean style sweet potato gratin by Ruhama Shitrit is a showstopper dish for any occasion. Using our za’atar to add delicious and bold mediterranean flavors. The thinly sliced sweet potatoes and the red onion caramelize together and simply melt in your mouth!

 
 
 

INGREDIENTS
6 small sweet potatoes, peeled and cut using a mandolin to thin slices
1 large red onion, cut using a mandolin to thin slices

Za’atar dressing ingredients:
1/3 cup of olive oil
3/4 teaspoon of sea salt
1.5 teaspoons of za’atar
1.5 teaspoons of honey or date syrup
1 Squeeze from a 1/2 lemon

Za’atar dressing method:
Put all the ingredients in a bowl and mix it well.
Garnish with fresh thyme leaves

Za'atar Sweet Potato Gratin Method:
1. Preheat the oven to 420F / 220C
2. In a greased pie pan (10.25 inch), place the red onion slices on the bottom and edges.
3. Add the sweet potato slices in 2 round circles.
4. Brush them with the za’atar dressing.
5. Cover with wet parchment paper and bake it for 40 minutes on 420F.
6. Remove the parchment paper and broil it for 5 more minutes.
7. Garnish with fresh thyme leaves.
